Yiorgos Tagaras delivers this olive oil to us himself. His parents, Eleni and Theofanis, tend to the olive groves and make the olive oil in Agios Vassilios, Greece. The chalky white soil in that area is known for producing exceptionally good olive oil — rich, thick and flavorful. The Tagaras olives are harvested completely by hand with wooden ladders propped carefully in the trees so as not to damage tender branches. The olives are combed off of the branches and onto canvas sheets placed under the trees. Tagaras unfiltered extra virgin Manaki varietal olive oil is vividly fresh and peppery with a long buttery finish. Use as a finish to grilled/roasted meats, fish, or veggies, to dress fresh tomatoes and summer salads or brushed on fresh focaccia piping hot from the oven.
