SAN LORENZO, CALDAS
The coffee producer group San Lorenzo was established in 1964. They’re an indigenous group based in the Rio Sucio municipality of Caldas who believe in Pacha Mama, acknowledging the land as a living being and seeing it as their duty to protect the natural environment. Thus, they aim to have as little impact as possible from their coffee farming, preserving the land as it’s always been.
Consisting of Caturra, Colombia, and Castillo varieties, this coffee is grown between 1,600 to 2,200 meters above sea level. During the harvest season, families work with their neighbors to select ripe cherries before de-pulping in micro-beneficios. The coffee is then fermented in water for 16 to 24 hours, depending on the weather. It’s then washed and put out to dry on small, roof-top drying patios for 8 to 14 days.
