The color of Ojai's pink moment, As these organically dry-farmed vines get older, they seem to produce a more compelling dry rosé each year. Lovingly foot-trod by Emily and daughter Talia, this wine offers a zesty balance of freshness and acidity, rounded by a chalky, pleasant finish. We'll be drinking it with oysters; burrata & arugula pizza; shrimp tacos; anything brunch-y.
Unfined & unfiltered. No cold stabilization; natural sediment will form upon extended refrigeration.
ABV: 13.2% • pH: 3.4 • TA: 0.5 g/100mL • Dry (Glucose/Fructose 0.3 g/L) • Planted in 2010; vineyard located at Triple B Ranches in Valley Center • Organically dry-farmed (non-certifed) • Vineyard soils: Visalia sandy loam • Elevation: 1,470 ft. • Pick date: September 1, 2020 • Brix at harvest: 21.5º • Hand-picked at sunrise • Foot-trod; 4 hours on skins, then whole-cluster direct-to-press • Native barrel fermentation for primary & malolactic • 3.5 months in neutral French oak; full malolactic • 15 ppm SO2 pre-bottling (the only addition of any kind) • Racked once before bottling • Unfned, unfltered, not cold-stabilized • Bottled December 18, 2020 • The Name: The Uncontainable: that which cannot be held captive.
